Coconut Mango Sticky Rice



Okay.  So this is Mitch and my favorite dessert of all time.  I remember when I first heard about it- Mitch loved it.  I was like ew... rice and fruit?? Gross! I thought it was just regular white rice.  Then I tasted one bite.. um. Fell in love. Definitely not regular white rice!  It's basically a super sweet-coconut milky rice with mangos on top, with a coconut syrup:) de-freakin-lish. Ever since, I've been hooked.  So I decided to try to figure out how to make it myself. It is about as close as it gets, I think!

Warning-
This is not healthy whatsoever.
It is gluten free, which is a bonus:)
but we basically don't even care one bit.

RICE
1 cup of jasmine rice (find it in the Asian section of your grocery store)
2 cans of coconut milk. (You will probably just use one, but buy two just in case. You'll see why.  You can use the light kind, but the regular kind is way  yummier.  Also find in your Asian aisle, usually)
2/3 cup of sugar

Directions:
Cook the rice in a rice cooker (I'm sure you can use a saucepan or however else you can make rice, we just always use a rice cooker) on the rice package directions, check to see how much water it calls for, for that 1 cup of rice.  Just substitute half of the water for coconut milk.  I always add just a little more than half.  Add in the 2/3 cup of sugar and stir it all up. Cook as directed (it'll take 30 ish mins)

SYRUP
2/3 cup sugar
1/3 ish cup of coconut milk

Directions:
Just boil them both together in a saucepan and keep simmering until it is syrupy.  It can take a little while.  If it is taking too long, just add more sugar and turn up the heat.  Let it get foamy and stir it a lot. It'll look kinda milky. 

While you are waiting for those to be done, slice up a mango.  We usually use one for both of us. Make sure it is super ripe.

Okay. So when your rice is done, stir it up a bit.  There will be some white residue around the edges, that is okay.  Just stir it all up.  It's okay if it isn't dry.  You want it to be sticky and kinda wet.

Dish it out using something like a measuring cup (pack it in) so that it will stay in a cute circle.  Put the sliced mango on top (I'm sure you can do it way prettier than I did last night) and drizzle it with the hot coconut syrup. Be super generous.  Use it all up!

So the most important part ever is adding VANILLA ICE CREAM on the side.  You will love it.

Enjoy!  It really is super easy.  It is hard to mess it up.  Even if you add in more of one thing or less of another, it will most likely still turn out!  I used to fret about the syrup. I could never get it to a syrupy consistency.  Then I realized it really was syrup consistency but I didn't realize it because it was so hot still in the saucepan! Once it cools even just a little it thickens. So anyways, don't worry.  It will for sure turn out.
